Tablitas, aka Flanken Ribs, are a special cut of beef short ribs, sliced thin—about ⅜ of an inch thick—right across the bone. This creates strips with several small cross-sections of bone surrounded by rich, marbled beef.
Also known Kalbi-style ribs in Korean cuisine, or vietnaese style Sườn Bò Nướng, this cut is prized for its bold flavor, quick cook time, and versatility.
